Mommy Makes the Best Food !!

I made Chicken Alfredo last night for dinner, and tonight I made mini lasagna noodles with spaghetti sauce. Both are quick and easy summer time meals. Not too heavy, and if you grab a package of Lipton Alfredo noodles & microwave them & microwave frozen (microwavable) chicken breasts (I buy mine at Super Walmart for a quick meal in a hurry) - you can have dinner ready in under 15 minutes. I usually serve this with frozen broccoli or whatever veggie Jaidy is wanting.

I bought the Walmart brand of Lasagna noodles (but forget using their sauce - it's gross). I microwaved the noodles while I was browning up my hamburger & making the spaghetti sauce. I threw it all together in under 15 minutes. Serve this with a salad and garlic bread & Wallah !!

My daughter just raved - Mommy you are the best cook ever. I honestly can make all of this stuff by hand and spend hours in the kitchen, but when it's just the two of us & on the go in the summer - quick and easy works as long as it's nutritious & tastes good. My daughter acts like I have been cooking for hours.

Shanghai Spaghetti is another one of my quick favorites along with Cheddar Broccolli Rice with Chicken. Cheddar Broccoli Rice is quickly made by throwing the lipton packet in the microwave & adding real frozen broccoli. Add some more cheddar cheese if you want it cheesier, and again the frozen chicken works for this too.

Shaghai Spaghetti is one of my favorites, and I order this whenever we goto Boston's Pizza. We boil spaghetti noodles in one pot while stir frying snow peas & stir fry veggies in another pan. Add frozen shrimp. When the spaghetti and the noodles are done, toss them all together with Peanut Sauce. This stuff is really spicy & Jaidy can't have peanuts, so I toss hers with sweet and sour sauce. Its a great way to get more veggies into her system. I usually add frozen edamame (soy beans) instead of peanuts (same crunch - much healthier).

Jaidy knows if she eats good, then she gets dessert. She is a picky eater, but is eating much better for me these days. She eats better when I make simpler meals than when I spend a couple of hours in the kitchen throwing down on my awesome homemade lasagna. I usually cook those kinds of meals when we have company coming.

For dessert tonight, I pulled out the chocolate graham crackers, the chocolate frosting, and sprinkles & let her decorate her graham cracker. If I let her help with the cooking, then I can get her to eat better. I gave her a glass of Chocolate Soy Milk (Silk brand is the bomb) and we had a chocolate fest & she doesn't even know the soy milk is not only good for her heart, but the chocolate in Silk brand soy milk has natural antioxidants.

There is no greater joy than being your child's hero, and I love it when she compliments my cooking !!
